Vegetarian Recipes | Paella with mixed beans and peppers | How to cook a vegetarian paella

A tasty vegetarian paella with mixed beans and peppers. In this video you will see how to cook a pure vegetarian paella to easily get your intake of beans and rice for your day to day requirements. As vegetarians and even vegans, beans and rice are essential for us to get the proteins we need, so beans give us a majority of the amino acids that make up a protein and the rice gives the rest that the beans are not able to provide, so that’s why we aim to mix the 2 foods together. If you’re running out of ideas, give this vegetarian rice dish a go, and if your vegan just change up the stock. For this paella I have used 1 knor stock cube to make the stock though you can used knorrs stock pot which they say is vegan 🙂

2 tablespoons olive oil/canola oil
260g mixed beans
200g paella rice
1 vegetarian stock cube
650ml water
1 red pepper
1 teaspoon turmeric
1 teaspoon paprika
1 red medium onion
1 teaspoon crushed garlic
salt to taste

1) make the stock – melt one stock cube into 650ml of boiling water

2) fry onions, red peppers, beans, garlic, and spices for 3-5 minutes on medium heat

3) add salt

4) add rice

5) add stock water and move rice around lightly to aim for an even spread

6) cook on medium high heat until water or bubbles are no longer seen

7) cover with foil and cook for another 20 minutes on the lowest heat

8) uncover and serve
