Hmmm…. How about a vegetarian burger? Maybe a twist on the usual soybean protein, using a different legume or quinoa that would go beautifully w/ peanut butter!

How about a curry recipe?
I love any and all Indian, Chinese, African, etc so any sort of ethnic dish like that in veggie form with peanut butter is great!!! I make African "chicken" often which has peanut butter (tons of it!). Love it.
I'd love to see a vegan version of some peanutty chicken and lettuce cups using tofu or tempeh.
I'd love to see a vegetarian version of enchiladas with peanut butter!
vegetarian salad with peanut dressing and tofu spring rolls/sushi with peanut sauce!
