Vegetarian meatballs recipe

1 pound white mushrooms, chopped into very small pieces
2 tbsp olive oil
pinch of salt to sauté mushrooms
1 1/2 tbsp butter
1/2 cup minced onions
7 minced garlic cloves
1/2 cup instant oatmeal
1 tbsp Ground ginger powder
1/2 cup breadcrumbs
1 tbsp parsley
½ cup parmesan cheese
1 tsp salt
freshly ground black pepper
1 tbsp cayenne and paprika
1 tsp Italian seasoning or oregano
2 eggs
3 cups of your favorite pasta sauce + 1 cup of water
Garnish with parsley

Fry mushroom with some olive oil and salt till the pan dries out. Add butter and cook for few mins more. Add onion and cook for 5 mins or till they are translucent. Turn off the stove , add ginger powder and fresh garlic and mix. Add oats and mix well and let it cool completely or at room temperature. Add all the other ingredients – 1/2 cup breadcrumbs
1 tbsp parsley
½ cup parmesan cheese
1 tsp salt
freshly ground black pepper
1 tbsp cayenne and paprika
1 tsp Italian seasoning or oregano
2 eggs
. Cover and refrigerate for 3-4 hrs or Let mixture sit overnight in fridge. After 3-4 hrs, form into meatballs and bake at 450 F for 10-15 mins till they are golden brown. Cook and simmer in your fave pasta sauce with 1 cup of water for 30 -45 mins. serve with rice or your fave pasta
