Vegetables pancakes: the quick and tasty vegetarian recipe!

Quick and easy to make, these fritters are amazing!INGREDIENTS
2 (150g) Carrots 1/2 of Onion Salt Water 2 (550g) Zucchini 2 Eggs Pepper 100g (3/4 cup) of Flour 8g (1/2 tbsp) of Baking powder Oil for frying

Grate the carrot and transfer it to a bowl. Add the onion, salt, water and mix everything together and set aside.
Peel a zucchini, grate it and squeeze the juice. Pour them into a strainer over the bowl and season with salt, then strain well.
Strain the carrot mixture and mix them together. Add the eggs, salt, pepper, flour, baking powder and mix well.
Fry in oil until they are golden brown on both sides.
