VEGAN SOFT TOFU STEW (Korean Recipe) | #13 (30 Videos in 30 Days) ♥ Cheap Lazy Vegan
Have you heard of Korean soft tofu stew also known as sundubu jjigae? Did you know that it’s actually super easy to make and also VERY delicious? This is definitely a huge comfort food of mine and I love eating it with a bowl of rice. You’ll find that you won’t be able to stop eating it… 🙂
VEGAN SOFT TOFU STEW RECIPE
Ingredients (for around 3-4 servings) –
6-10 pieces of dried kelp (or you can use kelp powder, see below)
around 2 cups of water (or veggie broth if you’re not using kelp)
1/2 onion
1/2 zucchini
1 king oyster mushroom (or whatever mushroom(s)….)
1/2 jalapeno pepper
1-2 garlic cloves minced
1-2 tbsp sesame oil
1-2 tbsp GOCHUGARU aka Korean Red Chili Pepper Flakes(see below for more info)
2 packages of extra soft tofu (soon tofu) or soft tofu
Salt to taste
1-2 green onions for garnish

I just made this and OMG it is amazing!!! I skipped the kelp and just went for veggie broth, but you’re right about the sesame oil. It MAKES this recipe.
I had the non-vegan version of this from a restaurant and it was so good! However, I’m not a huge fan of seafood soups, so I think I will like your version better. I’ll just skip the kelp and go for veggie broth.
I was vegan for about 8 months and then fell off for a few weeks. Let me tell you my body did NOT like that! So here I am trying to go back. Can’t wait to try this soup veganized!

Will silken tofu work? The only soft tofu I can find that looks like the one you are using contains egg (egg tofu).
