Vegetarian (vegan) caviar (roe substitute) is a delicious, nutritious and healthy dish for vegetarians.

Ingredients:
– Amaranth – 6 tbsp.
– Water – 500 ml.
– Roasted seaweed (nori) – 6 sheets
– Soy sauce – 5 tbsp.
– Olive oil – 5 tbsp.
– Sunflower oil – 3 tbsp.
– Ground coriander – 1/2 tsp.
– Salt – 1/2 tsp.

Cooking:
Boil amaranth until cooked in 500 ml of water. Finely chop the nori. Add soy sauce, mix well and leave for 5-10 minutes. After 10 minutes, add salt, spices, oil and amaranth. Mix well. Done! Bon Appetit!
