Shukto | Bengali Vegetarian Recipe | शुक्तो | Durga Puja Special | Food Tak



Shukto is a Bengali vegetarian delicacy, a part of every Bengali meal. Prepared with the choicest of veggies and ingredients, Shukto is a dish that you can enjoy during Durga Puja, Navratri or any other fast.

Ingredients:
Mustard oil
Dal wadi/Bodi
Bitter gourd/Karela
Panch phoron
Yellow mustard seeds
Ginger
Potato
Raw banana
Drumsticks
Brinjal
Salt
Sugar
Milk
Water

Method:
Heat mustard oil in a kadhai.
Add the dal wadi and fry them until they are golden brown. Remove them from the oil and set them aside.
Now add the chopped bitter gourd and fry them until they are crispy and golden brown.
Remove the bitter gourd, reheat the same oil and add panch phoron, yellow mustard seeds and chopped ginger.
Once these stop spluttering, add the potatoes, raw bananas and drumsticks.
Add the brinjal once the potatoes and raw bananas are tender.
Once the brinjal is almost done, add the wadis and bitter gourd.
Add salt and sugar, and mix well.
Finally, add milk and water and cook the shukto for 5 minutes.
Serve hot with plain rice at the beginning of the meal.
