I do believe "chay" means vegan; not vegetarian. Temple food uses NO animal products.

would using canned vegetable stock or vegetable bouillon not give the same taste as preparing the vegetable stock from scratch? But thank you so much for this recipe–I'm Vietnamese but ever since I became vegetarian, I haven't been able to enjoy homemade pho because my family makes it the traditional way

This is probably the best vegan pho I've found on YT so far, and it looks absolutely delicious! But there are so many ingredients that I doubt I can find it in one supermarket, and I live in Los Angeles…
That was not coriander you put on top. It was green onion.
