Easy 30 minute vegetarian lasagna skillet is fast, easy, healthy, loaded with veggies and still has carbs to keep us happy. You could add ricotta, cottage cheese to the recipe, or even make it with bow tie pasta or ravioli if you don't have lasagna sheets. Love busting out my cast iron for this one!
