Enjoy another Indian Curry version – Veg Diwani Handi with tons of vegetables in it. Yes it’s slightly different than what generally people make, but taste-wise you won’t feel the difference. Just my way of adding veggies to my family’s daily food.

Ingredients :
4.5 – 5 tsp oil
2 medium sized thinly sliced onions
7-8 chopped cashews
4 medium size chopped tomatoes
1/2 cup chopped french beans
1/2 cup carrot cut in small cubes
Salt as per taste
1 tsp turmeric powder (haldi)
Kashmiri red chilli powder (as per taste)
1 cup chopped cauliflower (gobi)
green peas
2-3 finely chopped garlic cloves
Small piece of finely chopped ginger
Some dried garam masala (tejpatta, big elaichi, small elaichi, dalchini, laung and jeera – optional)
1 tsp roasted cumin seeds (jeera) powder
1 tsp garam masala (powder)
1/2 cup water
2-3 spoon cooking cream
Some chopped coriander leaves

Method :
Heat up the flat base pan, pour 1.5 tsp oil
Add 2 medium sized thinly sliced onions, spread it and cook on high flame until it starts turning golden-brown
Stir it once, again spread it and cook until it turns fully golden-brown
Transfer it in a bowl
Pour 1 tsp oil in same pan, add 7-8 chopped cashews, saute and transfer it in a bowl.
Further add 4 medium size chopped tomatoes and cook until it turns mushy
Take it out in a bowl of onion and add some fried cashews in it.
Rest it for a while and grind in a mixer jar to make thick gravy.
Heat up another pan to fry vegetables
Pour 1-1.5 tsp oil/ghee
Add 1/2 cup chopped french beans
Add 1/2 cup carrot cut in small cubes
Add salt as per taste
Add some turmeric powder (haldi)
Add Kashmiri red chilli powder (as per taste) and cook it for a while
Then add 1 cup chopped cauliflower (gobi)
Add green peas when veggies are lightly cooked and mix it well
Transfer all veggies in a plate once it is half cooked
Further in the same pan, pour 1 tsp oil
Add 2-3 finely chopped garlic cloves
Add a small piece of finely chopped ginger
Add some dried garam masala (tejpatta, big elaichi, small elaichi, dalchini, laung and jeera – optional)
Now add tomato onion gravy
Add 1/2 tsp turmeric powder (haldi)
Add 1 tsp Kashmiri red chilli powder/(as per taste)
Add 1 tsp roasted cumin seeds (jeera) powder
Add 1 tsp garam masala (powder)
Add salt as per taste
Add 1/2 cup water and mix it
Cover the lid and cook for 5 mins
Add 2 spoon cooking cream, mix it and then add cooked veggies
Cook for 5 more minutes and add some kasuri methi on top
(Add ghee tempering on top – optional)
Take it in a serving bowl
Top with some cooking cream, fried cashews and chopped coriander leaves
