Great way to oven fry eggplant! This being an Italian dish though, italian parsley or basil leaves would be used to garnish this dish rather than cilantro…which is not an ingredient ordinarily used in classic Italian cuisine.
excellent recipe I'm making mine now and the cornstarch worked like a charm. my only recommendation for ingredient is to buy and use 'non gmo' corn starch. so important for this product to be non gmo or any corn product..pretty cheap at walmart. thank you so much for an amazing recipe!!!!!

Thanks you so much, this worked like a charm. Since going from vegetarian to vegan I hadn't made this, since I used to use egg before. But the cornstarch batter is such an awesome idea, and you are able to get some of the seasoning right on the eggplant which is nice.

Thank for this video! I tried this last evening, but my eggplant slices did not appear golden brown as yours did. Because they didn't look that golden brown, I kept them in the oven a little longer, and I overcooked them. Do you put any oil on your baking sheet or on the eggplant slices?

I made this yesterday, seemed really dry. I think it needed a bit of oil.
