This should work with any other starch as well right? Like Potato or Maize? And I use ready made gluten to make my seitan.

Gluten is an excellent meat substitute. Whats all the fuss I hear about it. Most recipes are Gluten free. Gluten is simply demonized and I don't understand why. Please enlighten me.
