BAGARA BAINGAN RECIPE / VEGAN RECIPE / INDIAN SMALL EGGPLANT CURRY



Ingredients:
9 small eggplants
some oil for frying the eggplants
1/3 cup of groundnuts, roasted
2 tbsp of sesame seeds, roasted
1/3 cup of shredded coconuts, roasted
3 tbsp cooking oil
1 bay leaf
1 tsp cumin seeds
1 mace
1 inch cinnamon stick
4 green cardamom pods
4 cloves
1/4 tsp of asafoetida powder
1/2 tsp of fenugreek seeds
1 medium size onion, chopped
1 tbsp of ginger and garlic paste
8 to 10 curry leaves
1 tsp of tamarind paste
1/2 tsp of turmeric powder
1 tsp of coriander powder
1/2 tsp of cumin powder
1 tsp of red chilli powder
1 tsp of kashmiri red chilli powder
salt to taste
some chopped coriander leaves
