Yellow Curry Recipe
(Makes 4 servings)

– 1 (4-ounce) can yellow curry paste
– 2/3 can of coconut milk
– 1 potato, diced into 1/2-inch cubes
– 1/2 onion, julienned
– 1 package firm tofu, cubed
– 1/2 bag bell peppers, frozen (about 8 ounces)
– 1 (8-ounce) can pineapples, strained and chopped into chunks
