1 Organic romaine lettuce, 1 1/2 C cooked chickpeas, 3 stalks organic celery (store bought is considered poison on the "dirty dozen" list, 1 large tomato diced, 3 Tbsp fresh minced Parsley, 2 Tbsp fresh minced peppermint, 3 minced scallions, 1/4 C diced olives.
For the dressing: Juice of 1 lemon, 3 cloves garlic through press, 3 Tbsp olive oil, 1/2 tsp Himalayan salt.

Empty contents of blender into a 2 quart saucepan and add one small dried bay leaf. Over medium heat and while whisking fairly constantly, bring to a gentle boil, reduce to a simmer, and cook, whisking often, 5-6 minutes, or until slightly thickened. Remove bay leaf. Pour over moussaka and bake as desired. The thickness varies by cashew freshness and by added starch, and can be thinned out with clear water in the saucepan. It does continue to set up in the oven.
milspecwife, this is what I use:
1 c raw almonds, soaked overnight, peeled and drained
1/2 c raw cashews, soaked overnight and drained
1 Tbsp Mediterranean pine nuts soaked overnight and drained
Rinse nuts and put into a high speed blender with: 2 c unsweetened plain So Coconut Milk, 1 tsp salt, 2-3 Tbsp nutritional yeast, dash each white pepper; sweet paprika; turmeric powder; nutmeg, 1 Tbsp plain tahini, and 1 Tbsp potato or tapioca starch. Blend until homogenous.
