Kosambari, a traditional salad that is healthy and easy to make is a celebrated salad dish in South India often made during the illustrious events of Ram Navmi and Navratri.
Ingredients:
210 gm (1 cup) green gram dal or Bengal gram dal
½ cup grated carrot
½ cup finely chopped cucumber
2 green chilies, chopped
1 tsp lime juice
2 tbsp fresh coriander leaves
salt to taste
¼ cup grated coconut
For Seasoning:
2 tsp oil
½ tsp mustard seeds
3 to 4 bits of dry red chili
Method:
– Wash and soak the dal in water for about an hour or two.
– Drain the water off the dal and put it in a bowl. Add the grated carrot and chopped cucumber. Put in the green chilies, coriander leaves, lime juice and salt.
– Mix in the grated coconut.
– Season with mustard and green chili.

Loved this recipe. Was initially surprised to see the dal being used in raw form, but soaking it in advance must be the trick to making it more digestible. Also like your cooking utensils. Especially the rustic looking ones. Where did you get that spice box? I'd like to order it , if it can be found online.

Anushruti, I like your dishes but I feel you overdo a lot of Karnataka dishes and make it seem more exotic than they actually are.

I' m always on your website browsing those recipes your stories reminds so much of my childhood days with my grandma& pa and those village stories ,i came to know u by your lentils and barley, vegetable soup I might have prepared that zillion times can't get enough of it ,your mom's dosa recipe amazing and u said it is a cross between davengere benne dosa ,immediately I found that recipe and prepared many times ,I love all your recipes.
