You will need:
– A packet of Cous Cous
– One cup of pomegranate seeds
– One cup of chopped mint
– One cup of cubed feta cheese

Brown Rice, Green Bean and Goats Cheese Salad
You will need:
– One medium bowl of cooked brown rice
– One cup of sweetcorn
– One cup of cooked green beans
– One cup of chopped soft goats cheese
– One cup of grated carrot, I used two large carrots

Kale, Edamame & Strawberry Salad
You will need:
– A medium size bowl of washed and de-stalked kale
– One cup of cooked edmame beans
– One cup of chopped strawberris
– Three chopped spring onion

Lime, olive oil & honey dressing
– 3 tablespoons of olive oil
– 1 freshly squeezed lime
– 2 teaspoons of honey
