Recipe Share | Mexican Mashed Potatoes | Great Side Dish to your Favorite Mexican Dishes
Hi there, Today I am sharing a fantastic side dish recipe called Mexican Mashed Potatoes also served at Abuelo’s Restaurant as Papas con Chile. This side dish is wonderful with any of your Mexican Main dishes and it freezes well too! I hope you enjoy and thanks for watching! – Shelly

My Version adapted from the link above:
4 large russet potatoes
3 ounces cream cheese, cubed
1/2 cup heavy cream
8oz Extra Sharp Cheddar Cheese, shredded
1/2 Tbsp salt
2 cloves garlic, minced
1/4 cup sour cream
1/2 diced bell pepper
1 – 10 ounce can of chopped green chiles
1 chopped and seeded jalapeno
extra salt or pepper as needed for taste
Wash, peel, and cube the potatoes. Place them in a pot of water covering completely and boil for around 20 minutes until soft and tender. Drain and return to the pot. Add in the remaining ingredients to the potatoes. Mash the potatoes until all ingredients are well blended.
