Paneer do pyaza is a rich and delicious gravy to serve with roti, paratha or rice.

Do pyaza recipes use onions as the main ingredient, mostly double the amount of onions or 2 kinds of onions.

I have used small onions or shallots for tempering, you can use the regular onions too. Just cube the onions and separate the layers.

Sauteing them in oil on a high flame brings in a sweet and delicate aroma that enhances the entire dish.
