salmonella can only grow "inside"meat if it is ground and held. Tartare is ok, like carpaccio because it is cut from a high quality steak and minced (or pounded) to order with high saftey precautions in practice (hopefully). its been going on for longer than the shit they serve in fast food, and ud be more likely to get sick from some punk teenager making your big mac than from a chef making your tartare. just sayin.

The name TARTARE, is from the way the ingredients are cut, and that is finely chopped. Like in a sauce tartare we add finely chopped pickles to the mayonnaise. It is however acceptable to make the fillet steak into a mince for practical reasons. The meat should be rather fresh than aged, to maintain the dark red colour. When I was a Chef de cuisine in the seventies, a peasant sent the steak back to the kitchen and requested to have it as fried meatballs. Obviously he spoke no French.
You have missed an ingredient in your mince and in your dish. Dijon mustard. People who want a cooked burger are free to go and eat at a fast food. You also serve cracker bisquits with the steak. It is like sushi, and eaten raw. Serve with an expensive Red French wine.
