Egg curry recipe

Eggs are the most protein rich and is also most popular food choice for who do not eat non-vegetarian food. We mostly use eggs in preparing snacks to main dish and even dessert. In Indian cuisine, eggs play an important role and are used in a number of dishes like pulao, biryani, fries and curries. Most people love to make egg curry, egg masala curry, boiled egg curry, egg fry, anda bhurji/egg bhurji, omelette apart from egg paratha. One such variation is easy egg curry, which is spicier than the normal egg curry. It’s not just spicy but tasty as well, and can be enjoyed in lunch and dinner both with your choice of rice, chapathi, puri, paratha or bread. Most people people love to have it with steamed/white rice or bhagara rice as it has so many flavours in it. Today, I am preparing easy and delicious egg recipe/egg curry which is using eggs.

Ingredients
Eggs-6
Oil- 2 tbsps
Cinnamon-1 inch stick
Cardamom-2
Shahijeera- 1 tsp
Green chillies-4 slit
Curry leaves- few
Onions- 1 big cup chopped
Gingergarlic paste-1 tsp
Tomatoes-1 cup chopped
Salt-1 tsp
Chilli powder- 1 tsp
Turmeric powder-1 tsp
Coriander powder- 1 tsp
Curd- ½ cup
Water- 1 cup
Coriander leaves- few chopped

How to make egg curry:
Heat oil in a kadai or a pan, add cinnamon, cardamom, shahijeera, chopped green chillies and few curry leaves, then give it a quick stir. Next add thinly chopped onions and also add gingergarlic paste, mix and cook on low flame till onions turns light brown in colour. Next add chopped tomatoes, salt, red chilli powder, coriander powderand turmeric, mix it very well and cook on low flame for 10 minutes. lastly add eggs one by one and sprinkle some chopped coriander leaves, close the lid, cook on low flame for 5 minutes again. That’s all, easy and delicious egg curry is ready to serve hot with rice, roti, chapathi or puri.
