It’s summertime! This means parades, warm weather, grilling, and corn on the cob is in season! Rupert and I make a simplified version of Mexican street corn, a simplified version of elote, (without the spice, because he’s just a little piglet) that’s easy, tasty, and only 3 ingredients!
With corn on the cob, mayonnaise, and some cheese, you can fire up the backyard grill and have delicious corn to go along with any meal, or as a main dish to a vegetarian meal. So why not give it a try today?

We have an idea for a 3 ingredient recipe! Which we discovered through experimenting- its tasty! Basically you get some peas and chopped leeks, fry them in a pan with load of butter and a bit of stock until its gets all mushy and the stock has reduced, then blitz it in a food processor- add seasoning and you have a delicious side!

I have been obsessed with corn on the cob lately! that exact recipe too! but I add a bit of spicy spices cause I love spicy!

~RUPERT!!!! Okay, I know it's just me; but when you start talking about cookouts and asking Rupert if he likes them; I'm flashing back to whole hog roasts my friend had growing up. Often sweet corn was served on the side. 🙂 Rupert, STAY AWAY FROM THE GRILL!!!
~I didn't know about mexi-corn until I met Eddie. It's SO tasty! I make it all year long using frozen corn (off the cob). They serve it in styrofoam cups in Texas when cob corn is off season. Just add in all the other ingredients and spoon it up.
~Forget kiss the cook, kiss the corn!
~We had sweet corn over the weekend at a family picnic. My mother-in-law cooked it a roaster since she had so many cobs. It was super tasty.
~We like using the mexican crema (sour cream) instead of mayo. It's thinner than traditional sour cream and works well.

Wow, so cute! Its amazing that you upload three days a week ~ I have enough issues producing 1 video a week. This recipe looks quite easy and fun, though I think I would have to add some chili and paprika ^_~ Being less soft and tender than rupert.
By the way Rupert is just a-freaking-dorable!
