Pulled Pork Meatballs
1 1/2 lbs Grass Fed Ground Beef 80 %
2 cups of coarsely chopped Pulled Pork
1 cup Sugar Free or Homemade Sweet and Spicy BBQ Sauce
Salt and Pepper
Mix all the above very well. Fashion 18 2″ meatballs and place them on a foil lined baking tray. Top each meatball with 1 tbls of BBQ sauce. Put into a 400 oven and bake for 20 minutes. Remove from oven add more BBQ sauce to the meatballs and bake for an additional 20 minutes or until meatballs are firm to the touch.
Homemade Sweet and Spicy BBQ Sauce
2 6oz. cans of Tomato Paste
1/2 cup powdered Golden Monk Fruit
1/3 cup of Apple Cider Vinegar
1 Tbls Liquid Smoke
2 Tbls of Worcestershire Sauce
1/2 tsp of Cinnamon
1 tsp of Garlic Powder
3/4 tsp of Onion Powder
1/4 tsp of Chili Powder
1/4 tsp of Cayenne Pepper
1/1/2 tsp of Paprika
Salt to taste
1 1/2 cups of water
Mix all ingredients in to a sauce cook on medium low heat for 25 – 30 minutes. Check for sweetness and spiciness. Add more of each if needed to you liking. Cool and jar. Keeps in frig for 2 weeks.
