Nuts & Seeds Mix

You can really use any combination of nuts, seeds and spices. Toast them together over low heat and keep them in a glass jar. Then, you can eat them as a snack or add them to breakfast cereals, or desserts.

Ingredients: 2 cups walnuts, crushed; 1/2 cup raw coconut flakes, 1/2 cup hemp seeds, 1/4 cup sesame seeds. 1/2 Tablespoon of ground cinnamon, cardamom & ginger powder

Amrantha Cereal

1 cup amranth seeds toasted, 2 cups water.

Chia Seed Pudding

1 cup chia seeds, 2 cups plant milk, 1/4 cup cherries

Simmered until thick and gooey.

Curried Cauliflower Nuggets

3 Tablespoons Brown rice flour
2 Tablespoons coconut flour
1 Tablespoon ground flax seed
1/4 c curry powder
2 tsp paprika
1 cup plant milk
1 pound cauliflower

Mix all ingredients but the cauliflower. Dip and coat the cauliflower in the batter. Put in a greased pan or on parchment paper. Bake in a preheated oven at 400 degrees for 30-minutes, flipping halfway through.

Millet

1/2 cup millet
1 vegetable stock

Bring to boil and simmer for 20 minutes covered.

Sauteed Swiss Chard

1 Tablespoon ghee
1/2 Tablespoon cumin seed
1 Tablespoon Criander seed powder
1 bunch swiss chard chopped

Saute spices in ghee until fragrant. mix in swiss chard and cook until done.

Tahini Sauce

1 Tablespoon tahini
1 Tablespoon olive oil

Mix together and pour on the swiss chard, millet and cauliflower.
