the recipes //

smoothie bowl:
3/4 cups almond milk
2 cups green spinach
1/2 banana; preferably frozen
1/2 avocado
1 cup frozen pineapple chunks

avocado “grilled cheese”:
1 cup mozzarella style cheese
2 avocados
1 garlic clove
3 cups fresh spinach
whole wheat bread

one pot chili mac:
1 onion
2 cloves garlic
1 pack Yves veggie meat; italian style
1 packet taco seasoning
1 can pinto beans; rinsed and drained
1 can kidney beans; rinsed and drained
1 can diced tomatoes
2 cups dry macaroni noodles
1.5 cups veggie stock
1 cup cheddar style cheese
chopped cilantro to serve

YOU GUYS wow I know hellOOOOo! it feels so dramatic writing this, because it isn’t dramatic AT ALL, but I have been gone for a very long time! to sum it up, I decided 2018 was the year to prioritize my degree(s) and getting real life experience across every and any nutrition sector I could get my hands on. as most of you know I am going to university in nutrition & health sciences on the pathway towards becoming a Registered Dietitian. I spent my year working incredibly hard at school, healthcare projects, volunteering at everything I could get my hands on that had to do with nutrition (I want experience in everything and anything nutrition-wise), and then spending whatever time I had leftover doing other life things – spending time w the people I love, my family, my friends, my mans, travelling, making music.

this year really hit it home for me that clinical nutrition is where I am meant to be. I always knew this, but everything I do each week writes it in stone a million times over. I love what I get to do. I work on hospital menu displays, with dialysis patients and their diet management, teach cooking classes for kids, make donation baskets with whole foods, cook some AMAZING $5 soup for seniors, help run dining events for hospital patients. I’ve learnt hands-on from the pros all about enternal feeding, allergies, diabetes. it has been so fulfilling it makes me want to cry haha. I love the nutritional science so much and I am so fulfilled knowing exactly where I need to be. I’m dramatic jeez, but it’s so true. nutrition is one of my life’s greatest passions. I want to make it easier for people to eat better and feel better.

I’ve started The Power of Plantbased, a long time coming project of mine. I’ll talk more about it later, but it is focused on content designed to make healthy eating easy and delicious. from nutrition and health articles, easy recipes, nutrition facts, meal prep inspo! we’ll have a website, insta, facebook, youtube vids. whole bunch of platforms you can turn to when you feel stuck on what you should eat. I won’t be the only one making content for it, I’ll have some helping hands which is great. it’ll be a team of people who love health as much as I do, so I can focus on school while simultaneously being able to inspire and create meaningful, beautiful, helpful content. I want to make something bigger than myself. this is the right step in terms of what I can do online. I am going to be in school for like 97 more years (I want to get my masters) (I love to learn man) (I want to learn alot, and apply alot).

for those who are interested in more details in terms of my goals in the science field, the majority (about 90%) of my goals with nutrition can only be achieved offline. I want to tackle efficient, sustainable nutrition for third world countries, work on undemanding diabetes management and prevention, learn more about the growing field of food intolerance, nutrient deficiencies. there is so much I want to do, and I really grew my drive across so many fields this year.

with that being said, the videos are back! as long as I can create content that is still there to help you even when I can’t be totally active, then I’m a happy girl. if you simply cannot deal with my inconsistency then I’m so sorry but that’s just how it’s gotta be when a girl’s got things to do!! haha. I still adore you. my videos will still be here.

for anyone trying to figure out what career to explore in this giant world of opportunity, I always share the same thing: explore everything and anything while you’re young. volunteer everywhere, get experience in a wide range of different things. volunteer at a community center, at a school, at a hospital. reach out to businesses who might be offering an internship, or ask to job shadow. get experience in the REAL world outside of school. it will really help you decide what you love and where you want to be.
