What I Ate Today: Healthy Vegan Recipes
I rarely make food content because I feel like it’s hard to make food look appetizing in videos! I hope you enjoyed this peek into my kitchen anyway. Have you ever tried any of Dr. Greggers recipes?

Breakfast Smoothie (adapted from the super green smoothie recipe): 1/4 cup mango, 2 cups spinach, 1/2 an avocado, an apple, 2 dates, 1-inch turmeric, ground flax, 2 tsp blended whole lemon, water.
Lunch: Mac and Cheese (recipe from Robin Robertson via The How Not to Die Cookbook). Heat 1 cup of broth and add 1/2 cup onion, 1 garlic clove, and 1 1/2 cup carrot, cook till soft.
Blend cooked veggies with 2 cups of broth in a blender with 1/2 cup nutritional yeast, 2 tbsp almond butter, 2 tsp miso paste, 2 teaspoons blended peeled lemon, 1 tsp mustard, 1/4 tsp paprika, 1/4 tsp turmeric, and 1 tsp Savory Spice Blend – blend till smooth.
Add sauce and 8oz cooked macaroni to a 2 1/2 quart baking dish and stir in 1 cup steamed broccoli. Top with bread crumbs if using. Bake for 20 mins in a 375-degree oven or until golden.
Dinner: (adapted from the sweet potato breakfast hash recipe) 2 sweet potatoes and a small head of cauliflower, riced. Roast sweet potato and cauliflower in a 350-degree oven until soft. Heat up veggies of your choice in a skillet (I used an onion, zucchini, and mushroom and sauteed with water). Add all veg to a skillet, add 1-2 cup beans (black, white, or red). Season with savory spice, salt, and pepper.
Kale Salad: wash and a head of kale, remove thick stems and chop into small pieces. (I didn’t measure the ingredients for the dressing, sorry! Just start with less and taste as you go: olive oil, Bragg’s Liquid Aminos, garlic, lemon juice, and nutritional yeast. Massage the dressing into the kale to soften and coat.
