Soya Baingan Aloo Sabzi is an easy and healthy meal option for you.

Ingredients:
Nutrela Soyabean Oil
Panch Phoran
Onion
Tomato
Turmeric Powder
Red Chilli Powder
Coriander Powder
Salt
Brinjal
Potato
Nutrela Soya Chunks
Water

Method:
Heat oil in a wok or kadhai.
Add panch phoran and let it splutter.
Now add onions, tomatoes and cook.
Add turmeric powder, red chilli powder, coriander powder and salt.
Cook the mix further.
Once the spices mix well, add brinjal, potatoes and Nutrela soya chunks.
Add water and cook until done.
