⟹ Baked Apples
Large organic apple washed – trim bottom so it stands
then cut off the very top of the apple and hollow the inside
Fill with toppings – almond butter, berries, coconut flakes, nuts, etc.
Then pop in a 350 degree oven for about 30 minutes, you want them soft and fork tender.

⟹ Pumpkin Frappuccino
4 pumpkin ice cubes or ¼ cup pumpkin puree with ¼ cup ice
*to make pumpkin ice cubes put pumpkin puree in ice cube trays and freeze
1 ½ cups of cold coffee
1 cup almond milk or whatever milk you like
1 tablespoon of sugar – I use xylitol as my sugar substitute (see below for info)
Add extra ice for thicker texture if desired. Blend and serve.

⟹ Apple Crumble
Start by peeling and chopping 4 gala apples, you want them in small even size chunks so they cook evenly
1 cup oats (I just use quaker oats)
1 cup flour (the flour substitute I use that works well in this recipe is almond flour it has a slightly nutty taste)
Then a ¼ cup sugar (I use xylitol see below for more info)
¼ cup nuts, I’m using pecans but walnuts, almonds and hazlenuts also work well
½ tsp of pumpkin pie spice or cinnamon
¼ tsp salt and
½ cup of melted vegan cinnamon butter – I found this at whole foods Earth Balance Sweet Cinnamon (you can also use unflavored vegan butter or regular butter)
Combine and top over your apples
Put in 350 degree oven for 35 minutes, about halfway through put some foil over top to prevent the crumble from burning

⟹ Pumpkin Chocolate Chip Loaf
Combine dry ingredients
2 cups flour – see flour substitution guide below. I use 1 cup 100% whole wheat pastry flour and 1 cup regular flour
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon baking soda
Combine wet ingredients
2 eggs
3/4 cup sugar- I again use xylitol
1 cup pumpkin puree
3/4 cups canola oil
Combine wet and dry ingerdients, then fold in ½-3/4 cup mini chocolate chips
Bake in loaf pan at 350 for 45 minutes – use a butter knife to check on it so it doesn’t overcook


⟹ Sugar substitute information – Xylitol
Note there are many sugar substitutes out there, this is just my personal favorite. Be aware that similar to chocolate and grapes, xylitol is toxic to dogs, so if you use it be careful that your furry friends don’t get it.

⟹ Flour substitute information
I recommend that you start by replacing ¼ to ½ of regular four required in a recipe with a substitute. In some cases the flour substitutes can make your baked goods denser or change the flavor slightly so you want to use this guide
