Mongolian Chicken – A Cooking Recipe From My Home in Inner Mongolia

Welcome to Xiao’s Kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia, in the northern part of China, where I visit each year and learn new Chinese recipes.

300g Chicken Breasts
5 Spring Onions
3 Cloves Garlic
5g Ginger
1 Green Chilli Pepper
½ Tsp Rice Wine
½ Tsp Light Soy Sauce
1 Tbsp Oyster Sauce
1 Tbsp Hoisin Sauce
½ Tbsp Dark Soy Sauce
2 Tbsp Brown Sugar
1 Tsp Sesame Oil
Pinch of Coarse Black Pepper
1 Tsp Cornflour
1 Egg White
3 Tbsp Chicken Stock

1. Cut the chicken into thin strips and the place in a bowl
2. Add the rice wine, light soy sauce, 1 Tbsp brown sugar, egg white and cornflour
3. Mix all ingredients together and leave to marinate for 30 minutes
4. Meanwhile, finely chop the garlic and ginger
5. Chop Spring onions into 1 inch in length and keep the white and green part separately
6. Deseed the chilli pepper and then cut into strips
7. Place the oyster sauce, hoisin sauce, dark soy sauce, remaining brown sugar, sesame oil, black pepper, chicken stock and sesame oil in a bowl, mix well
8. Heat 1 Tbsp of oil in a wok over high heat
9. Place the chicken and stir-fry for 4 minutes
10.Add the ginger, garlic and the white part of the spring onion in the wok and fry for a minute
11.Add the chilli pepper and stir-fry 30 seconds
12.Add the sauce mixture from above, stir and cook for a minute
13.Add the green part of the spring onions and stir
14.Remove, serve and enjoy
