Don't sprinkle the sesame seeds. Traditionally, it's covered in sesame seeds, so just dip the whole shrimp side into the sesame seeds
My mother always toasted the bread too. She made sure it came out pretty dried, but not brown (think stale bread). It fries better and doesn't soak up as much oil.
