Vegetable Cutlet, a delectable combination of mashed potato and green vegetables, is a crisp outside and soft inside Indian potato snack. It is a very popular and simple snack item, very easy to make and can be had as an appetizer or light afternoon snack or evening snack with tea.

Boiled & mashed potato- 3-4
Oil- 1 tbsp
Onion finely chopped- 1 medium
Ginger garlic crushed- 2 tsp
Green chillies chopped- 2
Grated carrots- 1 medium
Corns (boiled & slightly mashed)-1/4 cup
Peas (boiled & slightly mashed)- 1/4 cup
Capsicum finely chopped – 3 tbsp
Salt to taste
Pepper to season
Mixed herb seasoning- 1/2 tsp
Red chilly flakes- 1/2 tsp
Lemon juice- 1 tsp
Bread crumbs- 1/2 cup
Some fresh coriander
2 tbsp all purpose flour mixed with 1/2 cup water
Plain cornflakes ground into powder- 1/2 cup
